→ Dough

01 - 3/4 cup warm milk (110°F)
02 - 2 1/4 teaspoons active dry yeast (1 packet)
03 - 1/4 cup granulated sugar
04 - 4 cups all-purpose flour
05 - 1/2 cup unsalted butter, softened
06 - 2 large eggs
07 - 1 teaspoon salt
08 - 1/2 teaspoon ground nutmeg
09 - 1/2 teaspoon ground cinnamon

→ Filling

10 - 1/2 cup packed light brown sugar
11 - 2 teaspoons ground cinnamon
12 - 1/4 cup unsalted butter, softened

→ Icing & Decoration

13 - 1 1/2 cups powdered sugar
14 - 2 to 3 tablespoons milk
15 - 1/2 teaspoon vanilla extract
16 - Purple, green, and gold colored sugars
17 - 1 plastic baby figurine (optional)

# Directions:

01 - In a small bowl, dissolve yeast and 1 tablespoon sugar in warm milk. Let stand until frothy, 5 to 10 minutes.
02 - In a large bowl, whisk together flour, remaining sugar, salt, nutmeg, and cinnamon. Add softened butter, eggs, and yeast mixture. Mix until a cohesive dough forms.
03 - Turn dough onto a floured surface and knead for 8 to 10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise until doubled in size, about 1 to 1.5 hours.
04 - In a small bowl, combine brown sugar and cinnamon.
05 - Punch down dough and roll into a 10 by 20 inch rectangle. Spread softened butter evenly over dough surface, then sprinkle evenly with cinnamon sugar mixture.
06 - Roll dough tightly from the long side into a log. Pinch seam to seal. Shape into a ring by connecting ends and place onto a parchment-lined baking sheet.
07 - Cover ring and allow to rise until puffy, about 45 to 60 minutes. Preheat oven to 350°F.
08 - Bake for 25 to 30 minutes until golden brown. Remove and let cool completely on a wire rack.
09 - Whisk powdered sugar, milk, and vanilla extract until smooth and pourable.
10 - Drizzle icing over cooled bread. Immediately sprinkle colored sugars in alternating bands of purple, green, and gold while icing is still wet.
11 - If desired, insert plastic baby figurine carefully into the bottom of the ring before serving.

# Expert Tips:

01 -
  • It's showy enough to impress but actually forgiving once you understand the rhythm of the dough.
  • The cinnamon and nutmeg create this warm, almost comforting flavor that somehow feels festive and cozy at the same time.
  • Watching people's faces when they bite into the baby-shaped surprise never gets old.
02 -
  • Your milk temperature matters more than you think—get it wrong and your yeast won't activate, and you'll end up with dense dough that won't rise.
  • The two rise times can't be rushed; trying to speed them up results in a cake that either won't rise at all or over-proofs and collapses in the oven.
  • Brush the icing on when the cake is completely cool, or it'll run right off and pool at the bottom instead of coating the surface.
03 -
  • If your kitchen is cold, turn your oven on for 30 seconds then turn it off—stick your dough inside and it creates the perfect warm space for rising without drying it out.
  • Don't use melted butter; softened butter actually incorporates into the dough better and creates a more tender crumb.
